They aren't purposely leaving something so important out, they have to. Grout needs time to cure before it can be sealed and a lot of modern projects these days use specialized grouts or chemical additives that claim to reduce the porous absorption of the grout which changes what the grout will take for a sealer. Then you have surfaces that require a finish, some require a coating and so on. This is why it is highly recommended that you call an expert to apply the right sealer or protective product.
